Ingredients

  • 1.5 lb boneless, skinless chicken thighs
  • 1 yellow onion medium, chopped
  • 2 carrots sliced
  • 2 celery ribs sliced
  • 3 cloves garlic minced
  • 1 can (15 oz) cannellini beans drained and rinsed
  • 0.5 cup oil-packed sun-dried tomatoes drained and chopped
  • 1 tsp Italian seasoning
  • 0.25 tsp crushed red pepper flakes
  • 6 cups chicken broth
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 cup heavy cream
  • 5 oz baby spinach
  • 0.75 cup Parmesan cheese finely grated

Equipment

  • 1 6-quart slow cooker

Method

  1. Put the chicken thighs, onion, carrots, celery, garlic, cannellini beans, sun-dried tomatoes, Italian seasoning, red pepper flakes, chicken broth, salt, and black pepper in a 6-quart slow cooker.
  2. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 1/2 to 3 hours, until the chicken reaches 165°F in the thickest part and is tender.
  3. Transfer the chicken to a cutting board.
  4. Shred the chicken with two forks.
  5. Return the shredded chicken to the slow cooker.
  6. Stir in the heavy cream and spinach, cover, and cook on HIGH for 10 to 15 minutes, until the spinach wilts and the soup is hot.
  7. Turn off the slow cooker and stir in the Parmesan until melted.
  8. Let the soup rest for 5 minutes before serving.

Notes

For tender chicken, check that it reaches 165°F in the thickest part before shredding. Refrigerate leftovers for up to 3–4 days; freezing is possible, though the cream may change texture when reheated. For a dairy-free variation, use unsweetened dairy-free cream and a dairy-free Parmesan alternative.
