Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion medium, diced
  • 1 lb ground turkey
  • 0.75 tsp kosher salt
  • 0.25 tsp black pepper
  • 1 lb sweet potatoes peeled and cut into 1/2-inch cubes
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 0.5 cup low-sodium chicken broth
  • 5 oz baby spinach

Equipment

  • 1 12-inch skillet

Method

  1. Heat the olive oil in a 12-inch skillet over medium-high heat.
  2. Add the onion and cook, stirring occasionally, until softened, about 3 minutes.
  3. Add the ground turkey, salt, and pepper, breaking the meat into small pieces as it cooks, until browned and it reaches 165°F, about 7–9 minutes.
  4. Transfer the turkey and onion to a plate.
  5. Add the sweet potatoes, garlic, and paprika to the skillet and stir to coat.
  6. Pour in the chicken broth, cover, and cook over medium-low heat until the potatoes are fork-tender, 12–15 minutes.
  7. Return the turkey and onion to the skillet and add the spinach.
  8. Stir until the spinach wilts and the mixture is hot, about 2–3 minutes.

Notes

Cut the sweet potatoes into even 1/2-inch cubes so they cook evenly. Refrigerate leftovers in an airtight container for up to 4 days; freeze for up to 3 months. For a gluten-free meal, use certified gluten-free chicken broth.
