Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 tsp kosher salt
  • 0.25 tsp black pepper
  • 1 yellow onion small, diced
  • 1 lb sweet potato peeled and cut into 1/2-inch cubes
  • 0.5 cup chicken broth
  • 2 cloves garlic minced
  • 1 tbsp sage chopped fresh

Equipment

  • 1 12-inch skillet

Method

  1. Heat the olive oil in a 12-inch skillet over medium-high heat.
  2. Add the ground turkey, salt, and pepper. Cook for 6 to 8 minutes, breaking it into small pieces, until browned and it reaches 165°F.
  3. Transfer the turkey to a plate.
  4. Add the onion to the skillet and cook over medium heat for 3 minutes, stirring occasionally, until softened.
  5. Add the sweet potato and chicken broth, cover, and simmer over medium-low heat for 10 to 14 minutes, stirring once, until the sweet potato is fork-tender.
  6. Stir in the garlic and sage and cook for 30 seconds, until fragrant.
  7. Return the turkey and any juices to the skillet and cook for 2 to 3 minutes, stirring, until heated through.

Notes

For even cooking, cut the sweet potato into uniform 1/2-inch cubes. Refrigerate leftovers for 3 to 4 days or freeze them; use gluten-free chicken broth if needed.
