Ingredients

  • 2 lb sweet potatoes orange-fleshed, scrubbed and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tbsp brown sugar packed
  • 1 tsp allspice ground
  • 1 tsp thyme dried
  • 0.5 tsp garlic powder
  • 0.5 tsp ginger ground
  • 0.13 tsp cayenne pepper
  • 0.75 tsp salt kosher
  • 0.25 tsp pepper black
  • 1 tbsp lime juice fresh

Equipment

  • 1 large rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Line a large rimmed baking sheet with parchment paper.
  3. Toss the sweet potatoes with the olive oil, brown sugar, allspice, thyme, garlic powder, ginger, cayenne, salt, and black pepper until evenly coated.
  4. Spread the potatoes in a single layer on the prepared baking sheet.
  5. Roast for 30 to 40 minutes, turning them once halfway through, until tender and browned at the edges.
  6. Transfer the potatoes to a serving dish.
  7. Toss with the lime juice.
  8. Serve.

Notes

For the best browning, spread the potatoes in a single layer without crowding the baking sheet. Refrigerate leftovers for up to 4 days; freezing is suitable. For a lower-sodium version, reduce the kosher salt to taste.
