Ingredients

For the dates
  • 24 Medjool dates pitted
  • 4 oz goat cheese softened
  • 12 bacon regular-cut, cut in half crosswise
For the maple glaze
  • 2 tbsp pure maple syrup

Equipment

  • 1 rimmed baking sheet

Method

Prepare the dates
  1. Heat the oven to 400°F.
  2. Line a rimmed baking sheet with foil.
  3. Set an oven-safe wire rack on the sheet.
  4. Cut a slit lengthwise in each date.
  5. Open each date gently.
  6. Fill each date with about 1 teaspoon goat cheese.
  7. Wrap each stuffed date with a half slice of bacon.
  8. Set each wrapped date seam-side down on the rack.
Glaze and bake
  1. Bake for 15 minutes.
  2. Brush the dates with maple syrup.
  3. Bake for 5–8 minutes more, until the bacon is browned and crisp.

Notes

For easier filling, soften the goat cheese before stuffing the dates. Refrigerate leftovers in an airtight container for up to 3 days; freezing is not recommended. For a dairy-free option, use a dairy-free soft cheese in place of the goat cheese.
