Ingredients

For the graham cracker rim
  • 0.25 cup graham crackers finely crushed
  • 1 tbsp honey
For the martinis
  • 4 oz vanilla vodka
  • 2 oz pumpkin puree
  • 2 oz half-and-half
  • 2 tbsp maple syrup
  • 0.25 tsp pumpkin pie spice
  • 1 cup ice

Equipment

  • 1 cocktail shaker
  • 2 6-ounce martini glasses

Method

Prepare the rim
  1. Spread the finely crushed graham crackers on a small plate.
  2. Pour the honey onto a second small plate.
  3. Dip the rims of two 6-ounce martini glasses in the honey.
  4. Press the rims into the crumbs to coat.
Mix the martinis
  1. Add the vanilla vodka, pumpkin puree, half-and-half, maple syrup, pumpkin pie spice, and ice to a cocktail shaker.
  2. Shake vigorously for 20 seconds.
  3. Strain evenly into the prepared glasses.

Notes

For the cleanest graham cracker coating, dip the glass rims in honey and let excess drip off before pressing them into the crumbs. Best served immediately; refrigerate leftovers for up to 1 day and do not freeze. For a dairy-free version, use an unsweetened non-dairy creamer in place of half-and-half.
