Ingredients

For the treats
  • 1 cooking spray for the pan
  • 3 tbsp unsalted butter
  • 1 bag (10 oz) mini marshmallows
  • 0.5 tsp purple gel food coloring
  • 1 tsp vanilla extract
  • 0.25 tsp kosher salt
  • 6 cup crispy rice cereal
For the decoration
  • 36 googly candy eyes

Equipment

  • 1 9x13-inch baking pan
  • 1 8-quart pot

Method

Make the treats
  1. Coat a 9x13-inch baking pan with cooking spray.
  2. In an 8-quart pot, melt the butter over medium-low heat, then add the marshmallows and stir for 5 to 7 minutes, until completely smooth.
  3. Remove the pot from the heat and stir in the food coloring, vanilla, and salt until evenly colored.
  4. Add the cereal and fold gently until evenly coated.
  5. Transfer the mixture to the prepared pan and press it into an even layer with a lightly greased spatula.
Decorate
  1. Let the treats cool for 5 minutes.
  2. Press the candy eyes evenly over the top so each square will have 3 eyes.
  3. Let the treats set at room temperature for 30 minutes.
  4. Cut into 12 squares.

Notes

For chewy treats, press the mixture gently into the pan rather than packing it firmly. Refrigerate in an airtight container for up to 5 days; freeze for up to 2 months. For a dairy-free swap, use dairy-free butter and marshmallows.
