Cook the apples
- Melt the butter in a 12-inch skillet over medium heat, then add the apples, brown sugar, cinnamon, kosher salt, and lemon juice. Cook, stirring often, for 8 to 10 minutes, until the apples are tender but still hold their shape.
- Stir the cornstarch and water together in a small bowl until smooth, then stir the mixture into the skillet and cook for 1 minute, until the juices are glossy and thickened. Transfer the apples to a shallow dish and cool completely.
Make the whipped cream
- Beat the heavy cream, powdered sugar, and vanilla in a chilled large bowl with a hand mixer for 2 to 3 minutes, until medium peaks form.
Assemble the trifle
- Stir 1/8 teaspoon of the fine sea salt into the caramel sauce. If needed, microwave the sauce in 10-second bursts until pourable, then let it cool to room temperature.
- In a 5-quart trifle bowl, layer half the pound cake, half the apples, 1/4 cup of the salted caramel sauce, and half the whipped cream. Repeat with the remaining pound cake, apples, 1/4 cup caramel sauce, and whipped cream, then drizzle the remaining 1/2 cup caramel sauce over the top.
- Cover and refrigerate for at least 2 hours and up to 8 hours. Sprinkle the remaining 1/8 teaspoon fine sea salt over the top just before serving.
Notes
For the cleanest layers, cool the cooked apples completely before assembling. Refrigerate covered for up to 3 days; freezing is not recommended because the whipped cream and trifle layers can lose their texture. For a gluten-free option, use gluten-free prepared pound cake.
