Ingredients

For the brown butter honey glaze
  • 4 tbsp unsalted butter
  • 0.25 cup honey
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper freshly ground
For the carrots
  • 2 lb carrots peeled and cut into 1-inch pieces

Equipment

  • 1 6-quart slow cooker

Method

Make the glaze
  1. Melt the butter in a small saucepan over medium heat, stirring often, for 3 to 5 minutes, until it foams and the milk solids turn golden brown and smell nutty.
  2. Remove the pan from the heat and whisk in the honey, salt, and pepper.
Cook the carrots
  1. Put the carrots in a 6-quart slow cooker.
  2. Pour the glaze over the carrots and stir to coat.
  3. Cover and cook on LOW for 3 to 4 hours or HIGH for 2 to 3 hours, until the carrots are fork-tender.
  4. Transfer the carrots to a serving dish with a slotted spoon.
  5. Pour the cooking liquid into a small saucepan and simmer over medium heat for 3 to 6 minutes, until slightly thickened.
  6. Pour the thickened cooking liquid over the carrots and toss to coat.

Notes

For the nuttiest flavor, watch the butter closely as the milk solids turn golden brown. Refrigerate leftovers for up to 4 days; freezing is possible, though the carrots may soften when thawed. For a dairy-free version, use vegan butter.
