Method
- Preheat the oven to 400°F.
- Scrub the potatoes, dry them well, and prick each several times with a fork; rub with the olive oil and sprinkle with 1/4 teaspoon of the salt.
- Place the potatoes on a rimmed baking sheet and bake for 50 to 60 minutes, until the skins are crisp and a knife slides easily into the centers.
- Let the potatoes cool until easy to handle, about 10 minutes, then cut them in half lengthwise and scoop the flesh into a medium bowl, leaving a 1/4-inch shell.
- Mash the potato flesh with the butter, sour cream, warmed milk, cheddar, chives, remaining 1/2 teaspoon salt, and black pepper until combined.
- Spoon the filling back into the potato shells and bake on the baking sheet for 15 to 20 minutes, until the filling is hot and the tops are lightly browned.
- Let the potatoes rest for 5 minutes before serving.
Notes
For sturdy shells, leave a 1/4-inch layer of potato when scooping. Refrigerate leftovers for up to 4 days; freeze for up to 2 months. Plain Greek yogurt can replace the sour cream for a tangier filling.
