Ingredients

For the sweet potatoes
  • 2 sweet potatoes medium, scrubbed (about 1 1/2 pounds)
  • 2 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
For the topping
  • 4 oz goat cheese crumbled
  • 0.33 cup pecans chopped, toasted
  • 1 tbsp honey

Equipment

  • 1 5- to 6-quart air fryer

Method

Prepare and air-fry the sweet potatoes
  1. Preheat a 5- to 6-quart air fryer to 400°F.
  2. Cut the sweet potatoes into 1/4-inch-thick rounds.
  3. Toss the rounds with the olive oil, salt, and pepper.
  4. Arrange the rounds in a single layer in the air fryer basket, working in batches as needed.
  5. Cook for 10 to 14 minutes, flipping halfway, until tender and lightly browned.
Top the rounds
  1. Arrange the warm rounds on a serving plate.
  2. Top with the goat cheese and pecans.
  3. Drizzle with the honey.

Notes

For the best browning, keep the rounds in a single layer and work in batches as needed. Refrigerate leftovers in an airtight container for up to 3 days; freezing is not recommended. For a dairy-free version, use a plant-based goat cheese alternative.
