Ingredients

Bake the ham
  • 1 ham 8-pound, fully cooked, bone-in, preferably unsliced
  • 1 cup water
Pineapple glaze and topping
  • 1 cup brown sugar packed light
  • 1 can (20 oz) pineapple rings in juice drained, reserving 3/4 cup juice
  • 1 tbsp Dijon mustard
  • 0.25 tsp ground cloves

Equipment

  • 1 12x16-inch roasting pan
  • 1 instant-read thermometer

Method

Bake the ham
  1. Preheat the oven to 325°F.
  2. Set the ham cut-side down in a 12x16-inch roasting pan.
  3. Pour the water into the pan and cover tightly with foil.
  4. Bake for 1 to 1 1/2 hours, until the center reaches 120°F when checked with an instant-read thermometer, avoiding the bone.
Make the glaze
  1. While the ham bakes, combine the brown sugar, reserved pineapple juice, Dijon mustard, and ground cloves in a small saucepan.
  2. Bring to a simmer over medium heat, stirring, and cook for 6 to 8 minutes, until glossy and slightly thickened.
Glaze and finish
  1. Remove the foil and arrange the pineapple rings over the ham, securing them with toothpicks if needed.
  2. Brush the ham with about half the glaze.
  3. Bake uncovered for 20 to 30 minutes, brushing with the remaining glaze after 10 minutes, until the glaze is sticky and the center reaches 140°F; if needed, continue baking in 10-minute increments.
  4. Rest the ham for 15 minutes before carving, then remove any toothpicks.

Notes

For a glossy finish, brush the remaining glaze on after 10 minutes as directed. Refrigerate leftovers for 3 to 4 days; freeze for up to 2 months. For a gluten-free option, check that the ham and Dijon mustard are labeled gluten-free.
