Method
Prepare the casserole
- Preheat the oven to 350°F.
- Lightly grease a 9x13-inch baking dish.
- Bring a large pot of water to a boil, add the broccoli, and cook for 3 to 4 minutes, until bright green and crisp-tender; drain very well.
- Stir together the condensed soup, sour cream, cheddar, garlic powder, and black pepper in a large bowl.
- Fold in the drained broccoli.
- Spread the mixture in the prepared dish.
Add the topping and bake
- Crush the Ritz crackers into coarse crumbs.
- Stir the crumbs with the melted butter.
- Sprinkle the cracker mixture evenly over the casserole.
- Bake for 30 to 35 minutes, until the casserole is bubbling around the edges and the topping is golden brown.
- Let rest for 5 minutes before serving.
Notes
Drain the broccoli very well to keep the casserole from becoming watery. Refrigerate leftovers for 3 to 4 days; freezing is not recommended because the texture may soften. For a gluten-free option, use gluten-free crackers and check that the condensed soup is gluten-free.
