Ingredients

For the pastry cups
  • 1 package (17.3 oz) puff pastry frozen, 2 sheets, thawed according to package directions
  • 1 nonstick cooking spray for the pan
For the filling
  • 8 oz Brie cheese cut into 24 small pieces
  • 0.5 cup whole-berry cranberry sauce
  • 0.25 cup pecans chopped

Equipment

  • 1 24-cup mini muffin pan

Method

Make the pastry cups
  1. Heat the oven to 375°F.
  2. Coat the cups of a 24-cup mini muffin pan with nonstick cooking spray.
  3. Unfold the thawed pastry sheets.
  4. Cut each sheet into 12 squares.
  5. Press one square into each muffin cup, letting the corners extend above the rim.
Fill and bake
  1. Put one piece of Brie in each pastry cup.
  2. Top each with about 1 teaspoon cranberry sauce and 1/2 teaspoon pecans.
  3. Bake for 15 to 18 minutes, until the pastry is puffed and deep golden brown and the Brie is melted.
  4. Cool the bites in the pan for 5 minutes.
  5. Lift the bites out of the pan and serve warm.

Notes

For the neatest pastry cups, work with the puff pastry while it is cold. Refrigerate leftovers in an airtight container for up to 3 days; freezing is not recommended because the pastry can lose its crisp texture. For a nut-free option, replace the pecans with pepitas.
