Method
- Heat the oven to 400°F with racks in the upper and lower thirds.
- Line two rimmed baking sheets with parchment paper.
- In a medium bowl, mix the cream cheese, cheddar, cranberries, green onions, and salt until evenly combined.
- Unfold the pastry sheets on a clean work surface.
- Spread half of the filling over each sheet, leaving a 1/2-inch strip bare along one edge.
- Roll each sheet tightly toward the bare edge and pinch the seams closed.
- Place the logs seam side down, cover, and refrigerate for 30 minutes.
- Beat the egg with the water in a small bowl.
- Slice each log into 1/2-inch rounds.
- Arrange the rounds cut side up about 1 inch apart on the baking sheets.
- Brush the tops with egg wash.
- Bake for 15–18 minutes, switching the pans between racks and rotating them halfway through, until the pastry is puffed and golden brown.
- Cool the pinwheels on the baking sheets for 5 minutes before serving.
Notes
For neater slices, keep the pastry logs chilled until you are ready to cut them. Store leftovers covered in the refrigerator for up to 3 days; freeze baked pinwheels for up to 2 months. For a dairy-free variation, use plant-based cream cheese and cheddar and brush with plant milk instead of egg wash.
