Ingredients

  • 1 package (17.3 oz) frozen puff pastry thawed; 2 sheets
  • 1 block (8 oz) cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • 0.75 cup dried cranberries finely chopped
  • 3 green onions thinly sliced
  • 0.25 tsp kosher salt
  • 1 egg large
  • 1 tbsp water

Equipment

  • 2 rimmed baking sheets

Method

  1. Heat the oven to 400°F with racks in the upper and lower thirds.
  2. Line two rimmed baking sheets with parchment paper.
  3. In a medium bowl, mix the cream cheese, cheddar, cranberries, green onions, and salt until evenly combined.
  4. Unfold the pastry sheets on a clean work surface.
  5. Spread half of the filling over each sheet, leaving a 1/2-inch strip bare along one edge.
  6. Roll each sheet tightly toward the bare edge and pinch the seams closed.
  7. Place the logs seam side down, cover, and refrigerate for 30 minutes.
  8. Beat the egg with the water in a small bowl.
  9. Slice each log into 1/2-inch rounds.
  10. Arrange the rounds cut side up about 1 inch apart on the baking sheets.
  11. Brush the tops with egg wash.
  12. Bake for 15–18 minutes, switching the pans between racks and rotating them halfway through, until the pastry is puffed and golden brown.
  13. Cool the pinwheels on the baking sheets for 5 minutes before serving.

Notes

For neater slices, keep the pastry logs chilled until you are ready to cut them. Store leftovers covered in the refrigerator for up to 3 days; freeze baked pinwheels for up to 2 months. For a dairy-free variation, use plant-based cream cheese and cheddar and brush with plant milk instead of egg wash.
