Crispy Bacon Brussels Sprouts

Crispy bacon Brussels sprouts are roasted cut-side down until browned and tender, then tossed with crisp bacon. Drying the sprouts well helps them develop golden edges in the oven.

Ingredients

  • 6 bacon slices, cut into 1/2-inch pieces
  • 1.5 lb Brussels sprouts trimmed, dried well, and halved; quarter any large sprouts
  • 1 tbsp olive oil
  • 0.25 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 12-inch skillet
  • 1 large rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Line a large rimmed baking sheet with parchment paper.
  3. Cook the bacon in a 12-inch skillet over medium heat, stirring occasionally, for 8 to 10 minutes until crisp.
  4. Transfer the bacon to a paper-towel-lined plate.
  5. Toss the Brussels sprouts with the olive oil, kosher salt, and black pepper.
  6. Arrange the sprouts cut-side down in a single layer on the baking sheet.
  7. Roast for 20 to 25 minutes until browned and tender when pierced with a fork.
  8. Transfer the sprouts to a serving bowl.
  9. Toss the sprouts with the crisp bacon.

Notes

Dry the Brussels sprouts well before roasting to encourage browning. Refrigerate leftovers for up to 4 days; freezing is not recommended because the sprouts can become soft. For a lower-sodium option, use less kosher salt.
