Method
Make the soup
- Pat the beef dry and season it with 1 teaspoon of the salt and 1/2 teaspoon of the pepper.
- Heat 1 tablespoon of the oil in a 6-quart Dutch oven over medium-high heat.
- Brown the beef in batches for 6-8 minutes total, then transfer it to a plate.
- Reduce the heat to medium-low and add the remaining 1 tablespoon oil, the butter, onions, and remaining 1 teaspoon salt.
- Cook, stirring often, for 45-55 minutes, until the onions are soft and deeply golden.
- Stir in the garlic and thyme and cook for 30 seconds.
- Pour in the wine, scraping up the browned bits, and simmer for 3-5 minutes, until slightly reduced.
- Add the broth, bay leaves, beef and any accumulated juices, and remaining 1/2 teaspoon pepper.
- Bring to a simmer, then cover with the lid slightly ajar and cook over low heat for 1 1/2-2 hours, until the beef is fork-tender.
- Remove the bay leaves and taste, adding more salt if needed.
Toast and finish
- While the soup simmers, heat the oven to 400°F.
- Toast the baguette slices on an 18x13-inch rimmed baking sheet for 8-10 minutes, until crisp and golden.
- Set six 16-ounce broiler-safe soup crocks on the baking sheet and divide the soup among them.
- Top each with a baguette slice and some Gruyere.
- Broil for 1-3 minutes, watching closely, until the cheese is melted and bubbling with golden spots.
- Let stand for 2 minutes before serving.
Notes
For the deepest onion flavor, cook the onions slowly until they are soft and deeply golden. Refrigerate leftovers for up to 3 days; freeze the soup without the bread and Gruyere for up to 3 months. Use gluten-free baguette slices for a gluten-free option.
