Ingredients

  • 1.5 lb Brussels sprouts trimmed and halved
  • 2 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 3 cloves garlic minced
  • 0.5 cup Parmesan cheese finely grated

Equipment

  • 1 large rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Line a large rimmed baking sheet with parchment paper.
  3. Toss the Brussels sprouts with the olive oil, salt, and pepper.
  4. Arrange the sprouts cut side down on the baking sheet.
  5. Roast for 15 minutes.
  6. Turn the sprouts.
  7. Toss the sprouts with the garlic.
  8. Roast for 5–10 minutes more, until tender and browned.
  9. Sprinkle with the Parmesan.
  10. Roast for 2–3 minutes, until the cheese is melted.

Notes

For the best browning, arrange the sprouts cut side down without crowding the baking sheet. Refrigerate leftovers for up to 4 days; freezing is not recommended because the sprouts may soften. For a dairy-free option, use a plant-based Parmesan.
