Ingredients

For the bundles
  • 2 qt water
  • 1 tbsp kosher salt
  • 1.5 lb fresh green beans trimmed
  • 12 bacon slices, regular-cut, cut in half crosswise
For the glaze
  • 4 tbsp unsalted butter
  • 0.25 cup light brown sugar packed
  • 0.25 tsp garlic powder
  • 0.25 tsp black pepper

Equipment

  • 1 18x13-inch rimmed baking sheet
  • 1 12-inch skillet

Method

Blanch and assemble the bundles
  1. Preheat the oven to 400°F and line an 18x13-inch rimmed baking sheet with foil.
  2. Bring the water and kosher salt to a boil in a large pot.
  3. Add the green beans and blanch for 3 minutes.
  4. Drain the beans, spread them on paper towels, and pat dry.
  5. Cook the bacon in a 12-inch skillet over medium heat for 4 to 6 minutes, turning once, until some fat has rendered but the bacon is still pliable.
  6. Drain the bacon on paper towels.
  7. Divide the green beans into 12 equal bundles.
  8. Wrap each bundle with one half-slice of bacon and place it seam-side down on the prepared baking sheet.
Make the glaze
  1. Melt the butter in a small saucepan over low heat.
  2. Stir in the brown sugar, garlic powder, and black pepper until combined.
  3. Spoon the glaze evenly over the bundles.
Bake and serve
  1. Bake for 20 to 25 minutes, until the bacon is crisp and the beans are tender.
  2. Rest the bundles for 5 minutes before serving.

Notes

For neat bundles, pat the beans thoroughly dry before wrapping. Refrigerate leftovers for up to 4 days; freezing is not recommended because the beans can soften. For a dairy-free version, use dairy-free butter.
