Ingredients

  • 2 mangoes large, ripe but firm, peeled and diced (about 2 cups)
  • 0.25 cup red onion finely chopped
  • 1 jalapeño small, seeded and minced
  • 0.25 cup cilantro fresh, chopped
  • 2 tbsp lime juice fresh
  • 0.25 tsp kosher salt

Method

  1. Combine the mangoes, red onion, jalapeño, and cilantro in a medium bowl.
  2. Add the lime juice and salt, and toss gently to combine.
  3. Refrigerate for 10 to 15 minutes before serving.

Notes

For the best texture, choose mangoes that are ripe but still firm. Store covered in the refrigerator for up to 3 days; freezing is not recommended because the mango can turn soft.
