Ingredients

For the maple glaze
  • 0.25 cup pure maple syrup
  • 1 tsp Dijon mustard
For the dates
  • 24 Medjool dates large, pitted
  • 12 bacon slices, regular-cut, cut in half crosswise

Equipment

  • 1 12x17-inch rimmed baking sheet

Method

Prepare the pan
  1. Preheat the oven to 400°F.
  2. Line a 12x17-inch rimmed baking sheet with parchment paper.
Make the maple glaze
  1. Whisk the maple syrup and Dijon mustard together in a small bowl.
Wrap and bake the dates
  1. Wrap each date snugly with a half slice of bacon and place it seam-side down on the baking sheet, leaving space between the dates.
  2. Bake for 15 minutes, turn each date, and bake for 5-8 minutes more, until the bacon is browned and nearly crisp.
  3. Brush the dates all over with the maple glaze and bake for 3-5 minutes, turning once, until the glaze is tacky and the bacon is crisp.
  4. Transfer the dates to a serving platter.
  5. Let them cool for 5 minutes before serving.

Notes

For the best texture, leave space between the dates on the baking sheet so the bacon browns. Refrigerate leftovers in an airtight container for up to 4 days; freezing is possible, though the bacon may soften after thawing. Turkey bacon can be used for a pork-free option, but the texture and bake time may vary.
