Ingredients

  • 1 can (20 oz) pineapple tidbits drained
  • 1 can (15 oz) mandarin oranges drained
  • 0.5 cup maraschino cherries drained and halved
  • 1 cup sour cream
  • 1 cup miniature marshmallows
  • 1 cup coconut sweetened, shredded

Method

  1. Drain the pineapple tidbits and mandarin oranges well.
  2. Drain and halve the maraschino cherries.
  3. In a large bowl, stir the sour cream until smooth.
  4. Fold in the pineapple, mandarin oranges, cherries, marshmallows, and coconut until evenly coated.
  5. Cover and refrigerate for at least 2 hours before serving.

Notes

Drain the fruit well so the salad stays creamy rather than watery. Refrigerate leftovers in a covered container for up to 3 days; freezing is not recommended. For a dairy-free variation, use plain dairy-free sour cream.
