Ingredients

For the chicken and Brussels sprouts
  • 4 chicken thighs bone-in, skin-on; about 2 pounds
  • 2 tbsp olive oil divided
  • 1 tsp kosher salt divided
  • 0.5 tsp black pepper divided
  • 1.25 lb Brussels sprouts trimmed and halved
For the glaze
  • 0.25 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 1 cloves garlic minced

Equipment

  • 1 18x13-inch rimmed sheet pan

Method

  1. Preheat the oven to 425°F and line an 18x13-inch rimmed sheet pan with foil.
  2. Pat the chicken dry and arrange it skin side up on the pan.
  3. Rub the chicken with 1 tablespoon olive oil and season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  4. Roast the chicken for 15 minutes.
  5. Toss the Brussels sprouts with the remaining 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  6. Add the Brussels sprouts to the pan cut side down around the chicken.
  7. Roast for 20 minutes.
  8. While the chicken and sprouts roast, whisk the maple syrup, Dijon mustard, and garlic in a small bowl.
  9. Brush the glaze over the chicken.
  10. Roast for 8–12 minutes more, until the thickest part of each thigh reaches at least 165°F without touching bone and the sprouts are tender and browned.
  11. Rest the chicken on the pan for 5 minutes before serving.

Notes

For the most accurate doneness check, insert the thermometer into the thickest part of each thigh without touching bone. Refrigerate leftovers for 3–4 days; freezing is possible, though the Brussels sprouts may soften. For a gluten-free meal, check that the Dijon mustard is certified gluten-free.
