Method
Roast the sweet potatoes
- Heat the oven to 425°F.
- Line an 18x13-inch rimmed baking sheet with parchment paper.
- In a large bowl, toss the sweet potato rounds with the olive oil, kosher salt, and black pepper.
- Arrange the rounds in a single layer on the baking sheet.
- Roast for 12 to 15 minutes.
- Flip the rounds.
- Roast for 10 to 15 minutes more, until fork-tender and browned at the edges.
Whip the goat cheese
- In a medium bowl, beat the goat cheese, cream cheese, heavy cream, and lemon zest with an electric mixer on medium-high speed for 1 to 2 minutes, until light and fluffy.
Toast and assemble
- Toast the pecans in a dry skillet over medium heat for 3 to 5 minutes, stirring often, until fragrant.
- Let the sweet potato rounds rest on the baking sheet for 5 minutes.
- Spread about 1 teaspoon of whipped goat cheese on each round.
- Sprinkle the toasted pecans over the rounds.
- Drizzle with honey.
Notes
For even browning, arrange the rounds in a single layer without crowding the baking sheet. Refrigerate leftovers for up to 3 days; freezing is not recommended.
