Ingredients

  • 1 lb strawberries medium, washed and thoroughly dried, leaves attached
  • 12 oz white chocolate chips
  • 1 tbsp refined coconut oil
  • 0.25 cup mini chocolate chips

Equipment

  • 1 rimmed baking sheet
  • 1 microwave

Method

  1. Line a rimmed baking sheet with parchment paper.
  2. Combine the white chocolate chips and coconut oil in a deep microwave-safe bowl and microwave at 50% power in 20-second bursts, stirring after each, until smooth.
  3. Holding each strawberry by its leaves, dip it into the melted chocolate, letting the excess drip back into the bowl, then lay it on the parchment.
  4. While the coating is still wet, press on two mini chocolate chips for eyes and one for a mouth.
  5. Refrigerate the strawberries for 15 to 20 minutes, until the coating is set.

Notes

Dry the strawberries thoroughly so the chocolate coating adheres. Store covered in the refrigerator for up to 2 days; freezing is not recommended because the strawberries can become soft. For a dairy-free option, use dairy-free white chocolate chips.
