Honey glazed carrots are simmered in a covered skillet, then finished with honey and black pepper for a glossy coating. The carrots turn fork-tender while retaining their shape, making this a simple stovetop side dish.

Ingredients

  • 2 lb carrots peeled and cut into 1/2-inch-thick rounds
  • 0.5 cup water
  • 3 tbsp unsalted butter
  • 0.5 tsp kosher salt
  • 2 tbsp honey
  • 0.25 tsp ground black pepper

Equipment

  • 1 12-inch skillet with a lid

Method

  1. Combine the carrots, water, butter, and salt in a 12-inch skillet with a lid.
  2. Bring to a simmer over medium-high heat, cover, reduce the heat to medium-low, and cook for 10 to 15 minutes, until the carrots are fork-tender.
  3. Uncover and cook over medium heat, stirring occasionally, for 2 to 4 minutes, until the remaining liquid evaporates.
  4. Add the honey and black pepper, then stir for 1 to 2 minutes, until the carrots are glossy and evenly coated.

Notes

For even cooking, cut the carrots into uniform 1/2-inch-thick rounds. Refrigerate leftovers in an airtight container for up to 4 days; freezing is not recommended because the carrots may soften. For a dairy-free variation, use plant-based butter.
